Hearty Beef and Vegetable Stew

Ingredients:

  • 2 lbs locally sourced beef chuck shoulder
  • 4 cups homemade beef broth
  • 2 large carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup peas
  • Salt and pepper to taste
  • Fresh thyme and rosemary

Instructions:

  1. In a large pot, brown your beef chuck shoulder over medium heat.
  2. Add onions and garlic, cooking until softened.

  4. Add carrots, potatoes, and herbs. Cover and simmer for 1.5 hours.
  5. Stir in peas and cook for another 15 minutes. Season with salt and pepper to taste.

Pork Tenderloin with Apple Cider Glaze

Ingredients:

  • 1 pork tenderloin
  • 1 cup apple cider
  • 2 tbsp local honey
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • Salt and pepper

Instructions:

  1. Preheat your oven to 375°F.
  2. Season the pork with salt and pepper on both sides.
  3. In a skillet, preheat olive oil and sear your tenderloin until browned on all sides.
  4. In a bowl, mix apple cider, honey, and mustard.
  5. Transfer pork to a shallow baking dish and pour the apple cider mixture overtop.
  6. Roast for 25-30 minutes, basting occasionally, until the internal temperature reaches 145°F.

  • 1 lb premium breakfast sausage, sliced
  • 2 potatoes, diced
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • Salt, pepper, and paprika

Instructions:

  1. This one is easy and delicious! Cook your breakfast sausage in a large skillet until browned.
  2. Add the diced potatoes, bell pepper, and onion. Cook until all vegetables are tender.
  3. Create 4 ‘wells’ in your mixture and crack our farm fresh eggs into each well.
  4. Cover and cook until the eggs are set to your liking.
  5. Season with salt, pepper, and paprika. Serve.
